Before he returned to his hometown of Kirchberg, Bernhard Hochkogler made himself a name in haute cuisine when he was in Arlberg. He has been heading the kitchen team in the 4-star Gourmet Hotel Sportalm for quite some time since. Here, he presents some dishes which you can cook yourself at home. Or just drop by and try it straight from the gourmet kitchen of the Sportalm hotel.
Elderberry blossoms syrup
- 4 kg sugar
- 2 liters water Wasser
- 10 g lemon acid
- 15 elderberry blossoms
- 2 bio lemons
- recipe for aprox. 5 liters of syrup
And it is so simple: Boil the water, add the sugar. Afterwards add the elderberry blossoms, the lemon acid, and the sliced lemons. The syrup has to steep for 5 to 7 days in a container, which is a covered with a breathable cloth. Finally bottle the syrup and ENJOY.
Homemade bread tastes delicious and it is quite simple to do:

- 0,5 kg rye flour
- 0,5 kg wheat flour
- 1 yeast
- 1 pack of sourdough
- a dash of warm water
Blend alls ingredients to a smooth paste. Afterwards put the paste into a basket or another form of your taste. Bake the bread for around 1 hour in 200°C and add a small cup of water to the oven.
Enjoy your baked bread with butter and flesh chive from your vegetable patch.
